Lemon Bite Balls

Are you a lemon lover? Yes!? Then you’ll love this delicious Lemon Bite Balls. This recipe is perfect for beginners and super easy to make.

Let’s get started.

Ingredients

1.5 cup oats

1/4 cup unsalted cashews

1 cup frozen mango or pineapple

1/4 cup honey

1/4 tsp lemon juice

1/2 tsp lemon zest

3 drops lemon essential oil (I used Young Living)*

for wrap decoration: sliced almonds, coconut flakes, chia seeds

Instructions

  1. Place the oats and cashews into food processor and pulse them until they are ground like sugar consistency. Pulse for about a minute. Stop and stir.
  2. Add frozen mango (previously dried on a sheet of paper towel) Pulse for 20 seconds.
  3. Add honey, lemon juice, lemon zest, lemon essential oil.
  4. Pulse one more time for about 30-60 seconds.
  5. Mix all ingredients and form into bite size balls.
  6. Roll them into sliced almonds or anything you wish.img_6922al
