Easy Vegan Stuffed Mushrooms

If you like to eat mushrooms and need quick and easy vegan lunch you have to try this recipe. Its perfect to make when you’re throwing a party ~ goes great with a glass of wine and some crackers!

Vegan Stuffed Mushrooms

Ingredients

1 lb white button or cremini mushrooms

2 garlic cloves, minced

1 onion

2 carrots

pinch of himalayan pink salt

olive oil

arugula – optional

Instructions

  1. Remove stems from mushrooms, chop them fine and put them aside.
  2. Chop carrots, onions and mince garlic.
  3. Heat 1 tbsp olive oil in a frying pan ~ medium heat.
  4. Put chopped carrots, onions and garilic in a frying pan and saute. Cook until onion and carrots are soft. About 3-4 min on medium heat.
  5. Add chopped stems and pinch of salt (about 1/2 tsp) and cook additional 1 minute.
  6. Heat oven to 350 F.
  7. Melt 1 tbsp olive oil in a pan. Put mushrooms caps in a pan, sprinkle salt on top of them and stuff them with the mixture.
  8. Bake 15 minutes.
  9. Serve with arugula.
