If you like to eat mushrooms and need quick and easy vegan lunch you have to try this recipe. Its perfect to make when you’re throwing a party ~ goes great with a glass of wine and some crackers!
Easy Vegan Stuffed Mushrooms

Vegan Stuffed Mushrooms
Ingredients
1 lb white button or cremini mushrooms
2 garlic cloves, minced
1 onion
2 carrots
pinch of himalayan pink salt
olive oil
arugula – optional
Instructions
- Remove stems from mushrooms, chop them fine and put them aside.
- Chop carrots, onions and mince garlic.
- Heat 1 tbsp olive oil in a frying pan ~ medium heat.
- Put chopped carrots, onions and garilic in a frying pan and saute. Cook until onion and carrots are soft. About 3-4 min on medium heat.
- Add chopped stems and pinch of salt (about 1/2 tsp) and cook additional 1 minute.
- Heat oven to 350 F.
- Melt 1 tbsp olive oil in a pan. Put mushrooms caps in a pan, sprinkle salt on top of them and stuff them with the mixture.
- Bake 15 minutes.
- Serve with arugula.
